Garlic Scape Pesto
This pesto is a great way to use summertime ingredients to make a delicious pasta dish. This recipe is super easy to make and comes together in minutes. If you are not a fan of garlic, feel free to substitute the garlic scapes with fresh kale, basil or any herb of your choice.
INGREDIENTS:
- 350g garlic scapes (garlic flower)
- 1 lemon
- 1 cup walnuts (or other nuts like pine nuts)
- 1 cup extra virgin olive oil
- 1 cup grated Parmesan cheese (use real Parmegiano Regiano)
- salt
- pepper
DIRECTIONS:
- Cut the garlic scapes into 1 inch pieces.
- Zest and juice the lemon and set aside.
- Place garlic scapes with the walnuts, extra virgin olive oil and grated Parmesan and blend until it becomes a paste.
- Incorporate the lemon juice and lemon zest. Season to taste with salt and pepper.
- Serve on pasta, sandwiches, salads or with antipasto.
