Garlic Scape Pesto

This pesto is a great way to use summertime ingredients to make a delicious pasta dish. This recipe is super easy to make and comes together in minutes. If you are not a fan of garlic, feel free to substitute the garlic scapes with fresh kale, basil or any herb of your choice.

INGREDIENTS:

  • 350g garlic scapes (garlic flower)
  • 1 lemon
  • 1 cup walnuts (or other nuts like pine nuts)
  • 1 cup extra virgin olive oil 
  • 1 cup grated Parmesan cheese (use real Parmegiano Regiano)
  • salt 
  • pepper

DIRECTIONS:

  1. Cut the garlic scapes into 1 inch pieces.
  2. Zest and juice the lemon and set aside.
  3. Place garlic scapes with the walnuts, extra virgin olive oil and grated Parmesan and blend until it becomes a paste. 
  4. Incorporate the lemon juice and lemon zest. Season to taste with salt and pepper.
  5. Serve on pasta, sandwiches, salads or with antipasto.
