Tashkent Bazar style Honim
Ташкент Чорсу Базар Ханум
This traditional Uzbek dumpling recipe is a specialty of the Tashkent Chorsu Bazar (market) where street vendors sell these in vast quantities. What makes this recipe unique is the combination or potato, tomato sauce and dill. This recipe is also suitable for vegetarians.
INGREDIENTS:
- 2 cups all purpose flour
- 3/4 to 1 cup of water
- 1 tbs sunflower oil
- 3/4 to 1 cup of matchstick potatoes (sliced)
- 1 garlic clove (minced)
- 1 cup of tomato purée
- 1/2 Vidalia onion
- 5 tbs fresh dill
- red chili flakes
- pickled red chilies
- salt and pepper
DIRECTIONS:
- In a large bowl, combine sifted flour with salt. Mix.
- Make a well and add the water and oil. Knead until smooth. Let it rest for 30 minutes under a damp towel.
- Finely slice the onion and dill, and set aside.
- In a sauce pan, heat the tomato paste and season with salt, pepper, and chilies.
- Cut the potatoes in matchsticks (I recommend using a mandolin) and season with salt and pepper and chili flakes.
- Roll the rested dough to about 4 mm thin and cut it into 12 cm squares.
- Place filling onto the dough wrapper, and fold.
- On a butter or oil greased steamer, place your dumplings and steam for 25 minutes or until the filling is cooked.
- Coat the dumplings in the sauce. Top with the onion and dill mixture and pickled chillies if desired.
- Serve hot or at room temperature.
